PARIS, INNOVATION AND TRADITION
In one of the most prestigious luxury hotels in Paris, guests can
enjoy a traditional French cuisine, changing with the seasons and
enhanced with modern flavours.
Alain Ducasse brought in Patrick Jouin to oversee the interior design
of his restaurant. The finished look is rather different from the
old one but not dramatically so. It is “as if the décor
added its own extensions overnight”.
The maître d’hôtel appointed by Alain Ducasse
is Denis Courtiade who has worked with him since 1991.
He and his staff work tirelessly to provide a modern and convivial
service to their guests.
Black jacket, charcoal grey trousers, fine white cotton shirt with
a Georges NY collar and grey twill tie – this is the uniform
worn by the dining room staff. It was designed by Georges Feghaly and
is a perfect blend of Elegance and Good Quality.
